The New England Patriots went into Pittsburgh looking to extend their current string of dominance over the Steelers and laid a Halloween egg.  Ok so it?s the wrong holiday for eggs but you get the idea. The offense was as lame as the defense in what was the poorest effort of the season that resulted in a 25-17 loss at Heinz Field on Sunday afternoon. The absolutely strange part was that for as little as New England had the ball, and for as much as the defense tried to give the game away, the Patriots actually had a legit chance pull the game out in the end.  After a late Tom Brady TD pass to Aaron Hernandez cut the Steelers lead to six at 23-17 it looked like there might be some hope. But a botched onside kick and shortly thereafter a strip sack of Brady that resulted in a safety with :08 remaining put the game on ice for Pittsburgh. For about four months I've been avoiding cold cereal--both for the expense and for the lack of nutrition--and I've been quite creative in coming up with alternatives to the ubiquitous bowl of Lucky Charms.I had a stroke of genius around Halloween when I saved our pumpkins and roasted them up in the oven for an hour at 350 then pureed the remains. Here?s a recipe for delicious pumpkin oatmeal muffins:Ingredients:1 (18oz) package of yellow cake mix˝ tsp ground cinnamonĽ tsp cloves˝ tsp nutmeg1 cup rolled oats15 oz can pumpkin pureeĽ cup milk6 oz plain yogurt4 tsp vegetable oil2 eggs, beatenDirections:In a mixing bowl, combine the following ingredients: yellow cake mix, ground cinnamon, cloves, and nutmeg.In a small food processor, combine the pumpkin puree, milk, yogurt, vegetable oil and eggs. Process well until creamy.Combine the pumpkin mixture with the dry ingredient mixture. I posted a recipe for a vegan pumpkin pie a while back. I have been looking forward to baking this for some time and was very excited this past weekend when I finally made time for it. I am a big fan of pies and cakes. Also, I am always intrigued by vegan food and the many things you can do with tofu. I have made tofu cheesecakes in the past (Blueberry tofu cheesecake and Blackberry vegan tofu cheesecake) and those turned out totally delightful. The ingredient tofu is a great substitute for milk and eggs. I imagined tofu pumpkin pie would just be as amazing!I ended up making one 9 inch pumpkin pie and 6 mini ones. I used Keebler ReadyCrust graham cracker piecrust. I scaled up the ingredients a little. I only found 29 oz size cans of pumpkin puree and decided use it all up.The tofu pumpkin pies came out amazing! The spices made the pie very flavorful. Boaz from Grainpower chose coloured breads for the 14 th editon of Bread Baking Day. The only limitation is that whatever gives the bread colour must be natural. No problem, I like the colour which Hokkaido Pumpkins give to the bread crumb. The whole family liked it. I have already baked breads with pumpkin puree but neither this nor this had this wonderful colour. Unfortunately I had to take a picture from the whole bread with artificial light. The recipe is easy. I made a preferment from 125 g all-purpose flour (Weizenmehl 550) , 150 g water, 1/8 tsp dried yeast. About 16 h later I added 250 g pumpkin puree, 375 g all-purpose flour, 30 g toasted pumpkin seeds, 1 tsp. dried yeast and 10 g salt. Knead until the dough comes together and adjust the water or flour amount if necessary. Let rest until doubled in volume, form a boule and proof until a finger print doesn't come out quick.
