Daring Bakers July Challenge: Strawberry Mirror Cake!
2007-07-30 14:59:00 *UPDATED WITH HOW-TO PICTURES* I must admit, I had a lot of fun with this one. I have always loved light creamy desserts ones which the dessert?s beauty matches its taste! But as I am a novice baker, this is something I would have never attempted on my own ? I always thought it was too hard, too time consuming and just plain too annoying. So, in order to no longer have this excuse, I joined the Daring Bakers in June. I wanted to make sure that I learned how to bake, to really learn so I would know once and for all if my feelings about baking were actually based in truth, or if it was something I was just assuming. Now that I have joined and completed two challenges, I must say that baking is not really as god-awful as I thought! I have realized that I am not a big fan of baking breads as I do not enjoy the sensation of kneading. However, whipping eggs and cream and sifting flour ? that is not so bad at all. Recipe: Watermelon Two Ways!
2007-07-27 14:45:00 Watermelon is a big summertime treat! Cool and refreshing we enjoy it all summer long! Sometimes when you buy a huge watermelon it is hard to know what to do with the leftovers. Here are two great suggestions that are easy to make and oh so delicious - Watermelon Soda and Watermelon Granita. The first step gets you the soda; the next step gets you the granita. You can do this with any fruit ? cantaloupe is delicious and the next fruit I want to try it with is papaya, the king of all fruits (in my mind!). So cool off with these great treats! INGREDIENTS: Leftover fruit ? in this case watermelon. It is good to have about 4 cups of fruit. This will serve about 10 people one drink. Simple syrup ? to make simple syrup, please click this link ? use it to taste. I usually use ¼ cup to the 4 cups of fruit. Lime Juice ? I like to add a little tart-ness to my fruit sodas and ices ? So in order to help me out and get me on my way, he sent me one of his favorite dishes that he modified from his Mum?s recipe, a childhood favorite of his - Kheema. Her theme was a bikini ready menu. Now I am always looking for fennel recipes, because Roberto loves it so much. So when I saw her begin to prepare a grapefruit and fennel salsa for fish I was intrigued. For some reason I have been on a huge grapefruit kick and I have been experimenting with it a little bit this summer ? putting vanilla yogurt on it for breakfast, sautéing it and drizzling honey on it for dessert, etc. So this looked like the perfect match up! But then she lost me. She used halibut steaks, which to me is one of the most bland, most uninspired fishes. I have a huge collection of recipes I have torn out of magazines and newspapers, printed from online, etc etc over the years. These are recipes that have given me inspiration on creating new flavors and dishes. Every time I move, which seems to have been quite a few times over these past few years, I go through the box and get rid of the ones I will never make or have lost their lustor. This recipe has stuck with me over the years and I finally decided to try my version of it. As you know from my recent post about figs, fresh figs are finally in season and so I have been eating quite a lot of them! Summer is here in full blast and I was feeling a little fruity! I am not usually that much into frozen drinks ? brain freeze and all that, but on this day, I wanted something frozen, fruity and different. We had some leftover coconut rum from Easter and I decided to take a tour through the fridge and pantry to come up with a new drink! Another Leftover Queen classic move , but this time with a frozen cocktail drink - perfect for those steamy summer nights! This beautiful sunset colored drink is what was made. This is a great drink to surprise your guests at your next summer party or BBQ. Recipe: Leftover Bagel Bread Pudding
2007-07-13 14:50:00 This is the leftovers from the last Daring Baker?s Challenge ? Bagels! I love bread pudding and I made several sweet versions of the bagel in addition to the ones I showcased for the challenge and stuck them in the freezer, so I figured what better way to use them up than by making some bread pudding! Happy Friday everyone and enjoy your weekend! INGREDIENTS: 4 cups of bagel pieces 3 ½ cups of whole milk ½ cup of caramel coffee creamer (didn?t have enough milk, so took a gamble with this and it was really good!) 3 eggs ½ cup melted butter 1 cup of sugar 1 c. shredded coconut ¾ cup chocolate chips 1 tsp pure vanilla extract METHOD: Butter a large baking dish. Preheat oven to 350 F. Place bagel pieces into baking dish, sprinkle with coconut and chocolate chips. In a separate bowl, whisk together the milk, coffee creamer, eggs, melted butter, vanilla and sugar. Once sugar has melted, pour custard over the bagel pieces and bake for about 45 minutes. So I give you this wonderful little treat to check out while I am making my rounds to all of your beautiful blogs! Thank you so much to everyone for your support and well-wishes! We could not be happier over here! A while back I saw a delicious recipe for Pistachio Stuffed Nectarines that Susan at The Well-Seasoned Cook did. Roberto loves both nectarines and pistachios, so I knew I had to make this recipe, but it got a Leftover Queen Makeover! I didn?t have any cake hanging around so I substituted Ricotta cheese for it. I also had cottage cheese,which I am sure would work fine, but the ricotta cheese was older so I opted for that. I don?t really like orange extract so I chose vanilla instead. So good, I was all set. Recipe: Spinach Tagine with Lamb
2007-07-07 03:28:00 Tagine is a typical Moroccan dish that is cooked in a type of heavy clay pot which is also called Tagine. However, you do not need to purchase a new kitchen cookware item as you can also cook it in a baking dish by sautéing many of the ingredients before hand to create that tender falling off the bone meat experience. Lamb is a very common ingredient in Tagine, as is the cinnamon found in this dish. The result is something that is a cross between a stew and a custard or frittata. You can create a wonderful atmosphere at home, especially during the summer when you can dine al fresco! When dining al fresco you usually want to eat something fresh as well! I have really been craving summer tomato sauce. Not that wonderful hearty, deep slow-cooked for 3 days and it still takes a few days in the fridge until it is at its peak kind sauce, but a quick, light summer tomato sauce that is fresh rather than complex. Better Espresso Drinks Than Starbucks, At Home!
2007-07-02 21:23:00 Now doesn’t that look heavenly? That beautiful cloud of frothed milk sitting on top of luscious, deep dark espresso. I mean who doesn’t love espresso coffee drinks?!?! Well then check this out - I made this at home, this morning and I have one every single morning just like this - unless I am having a Greek style coffee frappe, which is a whole other adoring post of its own! I have this great little stovetop espresso machine and it makes better espresso drinks than Starbucks and I can have one whenever I want for FREE. I really do adore my caffettiera! I have always loved espresso drinks, whether they are lattes, cappuccinos, café au lait, café con leche, Cuban coffee, Turkish coffee, Greek coffee or just plain ?ol espresso. Mediterranean Medley Recipe: Baklava Ice Cream Bites
2007-06-30 16:05:00 This dessert is the final installment to my Mediterranean Medley class I taught last week at The Culinaria which is inside Bakers & Cooks here in Ocala, FL. I developed this recipe to try to emulate the flavors of baklava without all the work involved and without all the sweetness. I know, I know, I love Baklava like the rest of you and I know that the sweetness is what really makes it, but I was looking for a way to introduce people who may not have had baklava to the flavors, or give those who enjoy baklava another take on it. Plus, who doesn?t love ice cream?! My First Daring Bakers Challenge: BAGELS!
2007-06-27 13:00:00 Well everyone, I did it! I got through my first Daring Bakers Challenge and I am thrilled with the results. I am not sure bagels are something I would make from scratch again ? they are time consuming and so easy to buy, that I am not sure it is time efficient! But I am thrilled with the fact that I was up to the challenge and met it with creativity and fun! This month’s challenge, REAL HONEST JEWISH PURIST’S BAGELS was chosen by Freya and Jenny. Well my first challenge was not without its tragedies as baking for me generally is, but I was able to overcome them! The first hurdle was when I started the recipe and was proofing my yeast and realized that I did not have enough yeast. So I had to run out to the store for yeast and start all over again. Not much lost ? just 6 TBS of honey and some poor little yeast whose dream of being baked into bagels were crushed as they were un-ceremoniously dumped down the drain. It is no wonder, as Fattoush salad is one of those colorful, fresh, flavorful salads that pairs up so well with the summer season and foods of the summer. It is also one of my favorites. I am one of these people who never eats the same salad twice. Sometimes I have a common theme, but there is always something that gets tweaked along the way depending on what is in the fridge at the given moment. Salads are great for the Leftover Queen in all of us! I love variety of texture, taste and smell in my salads and almost more than any other dish, a salad has to be colorful! Recipe: Tunisian Carrot Salad with Harissa and Feta Cheese

Mediterranean Medley Recipe: Jenn?s Stuffed Grape Leaves with Tahini Sauce

But do not fear, I have been signed on to teach 3 more classes - 2 in July and 1 already in August, with more to come. So I will be posting some of those recipes as I go along. This is the recipe for my version of stuffed grape leaves. I think this is the 2nd recipe that I ever created myself. Recipe: Banana Ice Cream and Toasted Coconut Bites
2007-06-18 20:04:00 This is a wonderful dessert that is perfect for the summer weather we have been experiencing! You know those bananas that are almost brown and all you can think to do with them is make banana bread? Well here is another “cool” alternative! The best thing about this ?ice cream? is that it is 90% fresh banana which makes this an extremely healthy alternative to ice cream. Plus the bites themselves are so cute and inviting, that one or two is enough to satisfy you! I wish I could remember which blog I found the ?ice cream? recipe on. If you recognize this recipe please give me a shout so I can give you credit!!! However, I was inspired to turn them into bite sized confections rolled in toasted coconut. So many events and contests to keep our creative juices flowing and to really keep us all on our toes! I have been so inspired by these kinds of events that I became part of the Daring Bakers and started my own Foodie Event, the Royal Foodie Joust!
